In a lot of African communities, many food processing activities are very musical – on their own and sometimes with the help of song to maintain the rhythm of the task at hand. A good example is the pounding of maize to remove the kernel using a giant mortar and pestle that requires two people.
Another example is the processing of beans. You see, a portion of my research has involved the audio exploration of food. Here is a piece that I wrote for SYNONYM Magazine’s Rice & Beans issue, aptly titled The Percussion of Beans.
